Hebron, hat sie sich in Gastroenterologie, Hepatologie und pädiatrischer Ernährung im Krankenhaus Sant Joan de Deu in Barcelona ausgebildet.
Gemma Castillejo arbeitet seit dem Jahr 1998 als pädiatrische Gastroenterologin im Hospital Universitari ( Universitätskrankenhaus ) von Sant Joan de Reus.
Gegenwärtig ist sie Professorin an der Univeristät Rovira i Virgili, Mitglied der spanischen und europäischen Gesellschaft für Gastroenterologie, Hepatologie und pädiatrische Ernährung ( SEGNHP und ESPGHAN ) und ist Gründungsmitglied der spanischen Zöliakiegesellschaft ( SEEC ).
